You can’t beat a home-made Quiche
This is a simple recipe and so easy to make. I will show you how to prepare the pastry using ready-made short-crust pastry and just how easy it is to make the filling. This is a versatile dish which may be used as part of a main meal, as a snack or as a light lunch. You can omit the goat’s cheese or replace it with any other hard cheese that takes your fancy. You can eat it hot or cold, on it’s own or accompanied with new potatoes and a crisp salad.

1 Pack of ready-made Shortcrust Pastry
300ml Milk
25g Organic plain flour
40g Organic butter
3 large eggs
1 bunch of spring or salad onions
1 courgette
1 leek
8 small vine tomatoes
110g hard goat’s cheese
salt
